What is Tea?
All tea comes from the Camellia Sinensis plant. How the leaves are processed and their levels of contact with oxygen determine the resulting types of tea and the polyphenol content. During oxidation, tea leaves undergo natural chemical reactions that result in distinctive color and taste characteristics. What are Polyphenols?

All teas - black, green and oolong are from the same plant, Camellia sinensis, and contain polyphenols. Black tea is allowed to dry slowly, essentially fermenting, which oxidizes the leaves and deactivates many of the polyphenols.
